Wine Spectator senior editor and lead taster for the wines of Chile, Aaron Romano, recently got the chance to explore Chile as seen through the eyes of Rodolfo Guzman, the chef and owner of Boragó in Santiago. Guzman and his team held a short residency at Ritual by Manresa in Los Gatos, California, hosting dinners celebrating the country’s native ingredients, fused with seasonal California produce and paired with Chilean wines.
